Guacamole de Molcajete
Made in a stone mortar as God intended. The order of addition matters. Lime goes in last.
Add a handful of pomegranate seeds right at the end. The crunch and sweetness are the most underrated guacamole upgrade.
In the molcajete, grind onion and serrano with salt to a coarse paste.
Add jalapeño and pound lightly.
Halve avocados, remove pits. Scoop flesh into the molcajete. Mash — some chunks are good.
Add coriander, fold gently.
Add lime juice last, fold once. Taste. The avocado should be the dominant flavor.
Serve immediately or press plastic wrap directly on the surface. Will keep 2 hours in the fridge.

Fire-roasted tomatillo salsa folded into guacamole. Two sauces become one. Smoky, bright, and spicier.
Tomatillos, green chiles, and spinach replace the tomato base. Topped with avocado and cotija. The verde version has its own identity.
North African eggs poached in a spiced tomato and pepper sauce. One pan, twenty minutes, feeds a crowd. My go-to for lazy Sunday brunch.
